|Whole Spaghetti Squash|
1 spaghetti squash
toasted pine nuts
1. Using a large knife, cut the spaghetti squash lengthwise. Scoop out the seeds, and drizzle it with olive oil.
2. Lay the two halves face down on a baking pan. Bake at 350 deg for about 45 min. Remove pan from oven and allow it to cool for about 30 minutes.
3. Using an oven mitt, if needed, hold the spaghetti squash and scoop out the middle...it will come out in strands like pasta. Scoop it in a bowl. Mix with fresh chopped basil, chives, and salt/pepper. Toasted pine nuts (from a dry frying pan) are also great on top!
